Ingredients

1.5 kg beef shank, cross-cut
500 g beef marrow bones
150 g ghee or clarified butter
2 large onions, sliced
3 tbsp ginger-garlic paste
3 tbsp nihari masala blend
2 tbsp red chili powder
1 tbsp turmeric
2 tsp fennel powder
1 tsp nutmeg + mace
¾ cup atta flour (thickener)
2 L water · salt to taste

Method, in short

  1. Bloom the masala in ghee with sliced onions and ginger-garlic.
  2. Sear the beef shank + marrow bones until deeply browned.
  3. Add water, bring to gentle boil, then slow-simmer for 10–12 hours (the "taar" — never let it boil hard).
  4. Whisk the atta slurry in at the last hour for the signature glossy gravy.
  5. Rest 30 min off heat. Serve scorching hot with garnish and khameeri roti.
