01 · Founder Story
Zainab Ghadiyali

Meet Zainab Ghadiyali

A bootstrapper, a public-health-engineer-turned-founder, and the architect of a personal-chef platform that crossed $1M ARR in under eight months — on the conviction that what people really need isn't convenience, it's relief.

Personal site: zainabghadiyali.com ↗

The problem she founded on

EatCookJoy connects individuals and families with personal chefs — but the real product is taking the mental load of food off people's plates: the daily accumulation of what to make, whether it's healthy, whether the ingredients are in, whether it repeats last week.

On the other side of the equation: talented chefs who want out of restaurant kitchens but lack the infrastructure to build a client base. The gap between those two groups is the founding logic of the business.

Source: Canvas Rebel founder profile, April 6, 2026 ↗

The pivot & the rebrand

Zainab taught herself to code, was rejected by Facebook multiple times, then won a Facebook hackathon — and went on to build Facebook's first public-health product, which connected 30M+ blood donors in its first year.

EatCookJoy was bootstrapped first — coordinating chefs and clients by hand until it crossed six figures in annualized revenue. When Silicon Valley investors kept filing it under "chef marketplace," she rebranded to Snilito that same week. A new investor pool engaged; a lead investment followed.

"Perception can be the gap between a door opening and a door staying shut. The product hadn't changed. The traction hadn't changed. But the story the name told had — and that changed everything."

03 · SWOT Analysis

Where EatCookJoy UAE wins — and where it's exposed

Consolidated from nine SWOT and competitor-analysis sources. Market backdrop: UAE private-chef market $41.1M (2024) → $61.8M by 2030.

Strengths

  • Modern tech stack — Next.js + React + Stripe Connect + AI menu personalization; ahead of 17/20 rivals still on WordPress, Wix or form-based booking.
  • Proven operational software — US ops cut booking-processing time 63% (4+ hrs → 90 min) with <0.2% payout error.
  • Bilingual founder advantage — Arabic + English UX, content and concierge; no competitor offers a genuine Arabic-native experience.
  • Instant booking + AI menu — 0 of 23 competitors offer true instant booking.
  • 4-tier productized portfolio with transparent all-inclusive pricing AED 175–1,500/person.
  • Dual model — marketplace + white-label software for independent chefs.

Weaknesses

  • Cold-start trust & zero brand awareness in the UAE — US-focused to date (Austin, San Antonio, Houston, Dallas).
  • Chef supply bottleneck — needs ~25 founding chefs by May 2026 vs Take a Chef (610) and ChefMaison (712) Dubai libraries.
  • Zero SEO history & social proof vs Take a Chef 27K IG / Chef Luca 18K IG.
  • No UAE trade licence yet; legal docs (service agreements, PDPL policy, ToS) not drafted.
  • No pricing transparency on the live UAE site; payment / VAT / food-handler compliance gaps.
  • Bootstrap budget vs VC-backed entrants.

Opportunities

  • Six unclaimed whitespaces: bilingual/Arabic-first UX; instant booking + AI menu; Ramadan/Eid/National Day cultural SKUs; halal-clean Wellness tier; concierge-grade AI WhatsApp; B2B via Emaar/Damac concierges & Emirates NBD Privilege.
  • Growing market — 7.3% CAGR, special-diet/regional cuisine fastest-growing.
  • Underserved mid-market — weekly meal-prep, AED 200–500 family segment.
  • Trust gap on foreign platforms — Take a Chef, ChefMaison, MiumMium, Cozymeal have no UAE legal entity. ChefXChange's closure left a media void.

Threats

  • Entrenched Tier-A competitors — Take a Chef, ChefMaison, Splidu, InstaChef.
  • Price competition — InstaChef promo AED 51/hr; meal-prep (FitLab from AED 37.5/day) compresses margins.
  • Tech moats — Take a Chef & ChefMaison have deep SEO, multi-rail checkout, mobile apps.
  • VC-backed entry risk — YHANGRY (UK) could expand; ChefMaison already in 100+ countries.
  • Regulatory complexity — food-handler certs, OHC verification, VAT, GCC-national home-kitchen restriction.
  • Chef supply constraints — chefs going direct on Instagram/WhatsApp.

Stories & Balance — the HeyChef case study

The most useful SWOT in the UAE chef-marketplace category isn't a Tier-A foreign player — it's the one that already finished the journey. HeyChef.ae launched in May 2020, two co-founders (Pranav Arora & Mugdha Kalvade), zero VC, sold ~2024 to an undisclosed acquirer in the same domain. Studying their arc balances ECJ's strengths against a Dubai-specific reality.

The four-year arc

  • May 2020: launch in COVID lockdown · 2 chefs, 0 customers
  • Oct 2021: 6 chefs · 500+ customers · 3,000+ bookings · Unlock Awards Best UI + Best UX
  • Q1 2022: 7+ chefs · 600+ customers · 5,000+ bookings · ~95% recurring
  • Jun 2023: founder Pranav Arora exits day-to-day (3y 2m tenure)
  • ~2024: acquired by an undisclosed "prominent player in the same domain" — going-concern, est. USD 0.5–1.5M cash + earn-out
  • Funding: $0 — fully self-funded launch to exit

What they did right

  • Bootstrapped to exit — zero dilution, full optionality
  • Invested in brand & UX early (Aarts identity, "one-step-at-a-time" booking, the yellow)
  • Recurring subscription as cash moat — 95% recurring revenue at exit
  • Vetted chef roster + booking funnel = the saleable asset
  • Awards as free PR ammunition for M&A prep
  • Employee-chef model = clean OHC / visa / tax posture
"The key was to have a distinctive identity in the crowd of many unorganized players. Thus, we went bold. Owned and lived by the yellow." — Aashirwad Gupta, Aarts (HeyChef's design partner)

What they missed — ECJ's whitespace

  • Employee model capped scale — 5,000 bookings on 6 chefs is the ceiling of that structure; ECJ's independent-contractor + hard-compliance-gate model is built to scale past it
  • No native iOS / Android — talked 2021, never shipped
  • No Abu Dhabi — Dubai-only the whole way
  • No premium / B2B / UHNW tier — AED 5K–25K bookings left on the table
  • No public liability insurance disclosed (compliance score 5.8/10 per ecj-swot-legal-action)
  • FoodWatch posture grey — never publicly clarified

What they still pose — threats post-exit

  • Undisclosed acquirer = potentially capitalised sleeping giant; HeyChef.ae still live
  • Vetted chef roster may be supply-locked under the new owner
  • Six-year Dubai head start on brand recall, SEO, press archive
  • Customer expectation already trained at AED 65/hr recurring, AED 130/hr parties — ECJ's Tier-2 occasion dining must clear that anchor
  • Post-exit roadmap unknown — ECJ should monitor quarterly
  • Founder Pranav now CEO at JMTD Holdings (PE firm); Mugdha → PwC ME — both still in market
Balance read: HeyChef proved Dubai pays for hands-in-its-kitchen, then sold. ECJ's edge isn't out-marketing them — it's out-structuring them: independent-contractor marketplace, native mobile, Arabic-first, B2B/UHNW tier, all-emirates from day one, and a compliance posture that's audit-ready, not "partial." Treat the acquirer as a future ECJ buyer or sleeping giant — both stances are useful.

AI-App Tech Watch — the other HeyChef

Distinct from HeyChef.ae the Dubai chef-booking service: heychef.co / heychef.ai / heychef.menu is an AI meal-planning app — fridge-photo input, ChefBot recipe assistant, distributed as a Google Play TWA, monetised by subscription + 20% affiliate. It is, by its own positioning, a competitor to Snellito (the EatCookJoy rebrand). It belongs in ECJ-UAE's tech SWOT, not just the marketplace one — fridge-scan + chatbot is the AI-native pattern ECJ's own menu personalizer (§10) and recipe library (§16) will eventually be compared against.

Competes with
SNELLITO

Their strengths

  • Fridge-scan onboarding — turns a photo into a menu in seconds; lowest-friction entry point in the category
  • ChefBot — conversational recipe assistant; AI-native UX, not a bolted-on feature
  • Three-domain brand stack (.co / .ai / .menu) — defensive SEO and AI-discoverability moat
  • Google Play (TWA) distribution — ships fast without a native build; lower install friction than iOS
  • Subscription + 20% affiliate — recurring SaaS revenue plus grocery/CPG kickback layered on top
  • Global English market — no localisation tax, instant TAM

Their weaknesses

  • No human chef — solves planning, not "hands in the kitchen"; can't deliver the relief ECJ sells (§01)
  • Android-only via TWA — no native iOS; weaker in the iPhone-skewed UAE/GCC consumer base
  • English-only — no Arabic UX, no halal/Ramadan/Eid SKUs, no UAE grocery integrations
  • Affiliate revenue thin — 20% of grocery basket vs ECJ's 22–25% blended platform take on a real session
  • No marketplace, no chef supply — pure software; cannot capture occasion-dining or B2B/UHNW revenue
  • Brand name collision with HeyChef.ae — confuses buyers in the GCC search market

ECJ-UAE opportunities

  • Pair AI menu (§10) with real chefs — fridge-scan / craving-prompt is a feature ECJ can absorb; the chef + grocery + delivery stack is the moat HeyChef AI cannot reach
  • Arabic-first ChefBot — fridge scan in Arabic + halal-aware recipes = whitespace 0/23 competitors hold
  • Recipe library (§16) as RAG corpus — 100 costed AED recipes is structured training data the global AI apps don't have
  • UAE grocery affiliate — Carrefour / Kibsons / Talabat Mart affiliate paths plus chef sourcing margin (≤28% food cost target)
  • iOS-first launch — the device skew flips HeyChef AI's TWA-only distribution into a gap
  • Partnership / acquihire optionality — if HeyChef AI seeks GCC distribution, ECJ is the natural channel

Threats for ECJ-UAE

  • AI feature-set drift — if HeyChef AI ships chef booking on top of its planner, the wedge narrows
  • SEO & AEO bleed — three domains (.co/.ai/.menu) competing for "heychef" intent in GCC searches
  • Investor-narrative dilution — "AI meal-planning + chef marketplace" is a hot pitch; well-funded players may converge
  • Affiliate undercut — if HeyChef AI signs UAE grocery partners first, ECJ's grocery margin floor compresses
  • Talent & tooling lock-in — AI-native UX expectations rise; ECJ's Next.js/Prisma stack (§11) must keep pace on agentic features
  • Brand confusion exploited by foreign press — "HeyChef" recall ambiguity in copy and reviews
Tech-strategy read for www.eatcookjoy-uae.com: the AI app's killer feature (fridge-scan → recipe → grocery list) maps almost 1:1 to three ECJ workflows in §10 — menu personalization, grocery list & cost calculation, and the WhatsApp concierge. The defensible difference is the chef at the end of the flow. Treat HeyChef AI as a feature roadmap reference, not as a peer marketplace: ship Fridge-Scan into the WhatsApp concierge, route the output to a real chef quote, and the moat compounds.
Still to add when shared: founder & funding details, MAU / install counts, AI model provenance (OpenAI / Anthropic / open-source), pricing tiers, affiliate partners. Section will be extended as further AI-Tech intel is provided.
HeyChef — residual intelligence

The four-brand sprawl — and the trademark gap.

Beyond the case study, the HeyChef name has fractured into four separate brands by 2026 — a signal that the human-chef and AI-meal-planning categories are colliding.

The four HeyChef brands (2026)

  • heychef.ae — the original Dubai human-chef service. AED 75/hr in 2022 (2-hr minimum).
  • heychef.ai — AI meal-planner app, iOS + Android, $9.99/mo · $79.99/yr, HeyFit fitness integration.
  • heychef.menu — AI recipe generator, $9.99/mo · $99.99/yr, 20% affiliate program.
  • co.heychef.twa — Google Play "100% AI-native": Fridge Scan + ChefBot.

What EatCookJoy should do

Position: "human chef + AI assist" — layer AI meal-planning, smart grocery lists (Kibsons / Carrefour API) and fridge-scan onto the human-chef marketplace, rather than competing as a pure app.

Protect the name: file UAE trademarks for "eatcookjoy" and "Snellito" in classes 9, 35 and 43 before the brand collision widens.

Instant booking + AI menu (no one offers it), Arabic-first UX (0 of 23), all-inclusive AED transparency, a UAE legal entity + insured/OHC-verified compliance moat foreign platforms have none, cultural SKUs (Ramadan/Eid), a mid-tier price wedge, and a modern stack vs legacy sites.

Where it's exposed

Chef-supply depth (Take a Chef 610 / ChefMaison 712 vs ECJ's 25 target), zero SEO history, zero brand & social proof, a bootstrap budget vs VC players, and direct same-city same-segment overlap with HeyChef.ae's six-year head start.

Pricing conclusions

Validated UAE live private-chef range is AED 305–700+/pax; meal-plan range AED 46–150/day; full-time chef placement AED 8–40K/mo. The gap between AED 35–50/meal pre-prepared food and AED 300–500+/pax live-chef events is "real, wide, and unowned." Canonical live pricing architecture (3-tier): Tier 1 Meal-Prep from AED 49/serving · Tier 2 Occasion Dining from AED 185/pax auto-quoted (20–39% below market floor) · Tier 3 Part-time Private Chef AED 9,500–12,500/mo. Chef revenue share held at 70–75%, blended platform take 22–25%.

Pricing model conflict: the 3-tier model above (§04) is the canonical live architecture. A separate 4-tier "Joy" product ladder also exists as a proposed alternative under evaluation — Joy Foundation AED 175–250/pax (22% take) · Joy Occasions AED 295–595 (25%) · Joy Signature AED 600–950 (27%) · Joy Wellness AED 750+ (28%); blended AED 555 avg ticket, 26% take at 100 events/mo. §03 Strengths and §13 Roadmap currently reference the 4-tier model — treat those references as "proposed" pending a pricing-architecture decision.

Per-person session pricing across the UAE field, in AED. Bars show the published range; the EatCookJoy bar shows the canonical 3-tier from Pricing conclusions above. Reading the chart: EatCookJoy sits below the validated AED 305–700/pax market floor by a deliberate 20–39% wedge. The Tier-2 occasion-dining anchor (AED 185/pax) is shown as the dashed reference line. Hourly-only platforms (HeyChef.ae, EAZ Chef) are shown at their hourly rates with dashed outlines so the unit difference is visible.
Not charted (hidden / non-per-person pricing): Private Chefs Atelier (premium, unspecified), Biospan (quote-based, hidden), Elite Butlers (AED 8K–40K/mo full-time placement — different unit).

Trust-risk note: a Chef On Demand Trustpilot review reported a quote that jumped AED 10,000 after expiry — illustrating the cost of opaque, non-instant pricing.

Competitor dataset

The full 20-company competitive dataset.

Behind the headline table sits a structured 20-company × 13-column dataset — full profiles, pricing, tech stack and sources — the working source for every competitive call.

Companies mapped beyond the headline table

The dataset adds brands and adjacents not in the main competitor table above: HireAChef.com (USPCA), A La Carte Premium FZCO, La Chefa, FoodieYeah (defunct), Chefslist GmbH, Kibsons (grocery delivery — indirect competitor / potential partner), Chef Works Middle East (equipment/uniform supplier, not a marketplace), and Zen-Cook Finder (GoDaddy-built, 200+ chefs / 550+ cooks / 80+ nationalities, owned by Molecule Biz).

Each row carries: HQ & footprint, chef count, AED per-pax pricing, booking method, tech platform, social handles, review scores, and a source URL. Selected data points: Take a Chef (Madrid HQ, ~40% US business, 569–610 Dubai chefs, AED 296–482/pax, 27K IG, Airbnb Luxe / AmEx / Four Seasons partnerships); Private Chefs Atelier / Chef Luca Napoleone (Classic AED 600 / Premium 800 / Elite 1,500 per pax + VIP membership AED 2,500/yr).

Data-quality note: the dataset's "Top 8 SWOT" tab was structured but left partially empty — only the eight company-name headers exist. The four-quadrant SWOT for priority competitors still needs to be populated using the rich per-company intelligence already on file.

06 · Key Agreements

The contracts that hold it together

The Master License Agreement, the US/UAE Software Rights Agreement, and the Independent Contractor Agreement — parties, purpose and key terms.

A · Master License Agreement (MLA One-Pager)

Draft · 6 May 2026

Parties: Licensor EatCookJoy Inc. (Delaware C-Corp, Founder/CEO Zainab Ghadiyali, 20% equity) and Licensee Eat Cook Joy UAE (NewCo, Aziz Saif — Business Development for the Gulf, 80% equity).

Purpose: 5-year exclusive software + trademark licence into the UAE.

Key terms: 10% royalty of Net Commission Revenue (monthly); 6-month grace at 0%; USD 2,500 monthly floor from month 7 (greater-of); Territory = UAE + 12-month right-of-first-refusal on KSA, Qatar, Bahrain, Kuwait, Oman. Milestones — M6: 25 chefs · M12: 75 chefs + $50K GMV · M24: 200 chefs + $250K GMV (under 50% at M6 → royalty drops to 5%; over 150% → auto GCC expansion). IP fully owned by Licensor, Licensee improvements assigned back; $2M product-liability insurance; 24-month founder non-compete; Delaware law, DIFC-LCIA arbitration, Dubai seat. Architecture: MLA + Shareholders Agreement + SLA.

B · US/UAE Software Rights Agreement v3 — "Final Agreement, 8 May 2026"

FINAL v3.0 · effective 1 June 2026

Parties: EatCookJoy Inc. (ECJ-US) — Zainab Ghadiyali, Delaware; owns platform/AI engine/source code/brand, holds 20% equity, bears 100% of software dev costs, receives 3% royalty of GMV. Eat Cook Joy UAE (ECJ-UAE) — Aziz Saif, 80% equity, exclusive Gulf rights (UAE, KSA, Oman, Kuwait, Qatar, Bahrain), bears all operational costs, pays royalty within 15 days of month-end, acts as Data Controller.

Revenue waterfall (per 100 GMV): Chef pool 70 → ECJ-UAE commission 30 → less VAT 1.5 (5% on commission) → less royalty 3 → net retained 25.5 (pre-tax). Corporate tax 15%; late fee 1%/mo; liability cap = 12 months' royalty; confidentiality survives 5 years; non-compete 12 months post-termination. Term 5 years; termination on material breach (30-day cure), performance failure >25% (60-day), insolvency (immediate). Governing law DIFC + UAE overlays; 30-day mediation then DIFC-LCIA arbitration.

C · Independent Contractor Agreement — Kendrick King

Effective 25 June 2024

Parties: Kendrick King ("Contractor", Austin TX) and Eat Cook Joy Inc. ("Company", signed by Zainab Ghadiyali, President).

Purpose: contractor culinary / meal-prep services — weekly meal planning, grocery pickup, meal prep & cleaning, kitchen health & safety compliance.

Key terms: $30/hour part-time, paid weekly via Zelle; Company owns all Inventions/IP with assignment; confidentiality; non-solicit & non-compete during engagement + 1 year; termination — either party on 3 days' notice for uncured breach, Company anytime on 10 days' notice; independent-contractor status, no benefits; governed by California law.

Flag for counsel — royalty basis: MLA royalty = 10% of Net Commission Revenue (NCR) with a USD 2,500/mo floor (floor governs until NCR ≥ $25,000/mo ≈ $181K GMV/mo). SRA v3 Final royalty = 3% of GMV — a materially different base and rate. These two formulas must be reconciled before signing.
Flag for counsel — non-compete length: MLA records the founder non-compete as 24 months; SRA v3 records it as 12 months. Additionally, the SRA v3 FINAL PDF is internally contradictory — clause §13.8 states 12 months, while its own page-11 sign-off checklist states 24 months. To be reconciled with counsel before signing. Also conflicting: effective date (MLA 6 May vs SRA 1 June 2026), governing law (MLA Delaware vs SRA DIFC + UAE).

MLA royalty (10% of NCR)$1,380Floor governs — see note
MLA floor breakeven: NCR must reach $25,000/mo for the 10% royalty to exceed the USD 2,500 floor. This requires approximately $181,000 GMV/mo (18% commission minus typical deductions). The floor governs for the first several months of operation.

MLA — Negotiation Counter-Positions

  • Stepped royalty: 7.5% first 12 months → 10% thereafter (vs flat 10% as drafted)
  • Mutual indemnification cap: 12 months' royalty payments (vs uncapped)
  • Force-majeure carve-out: Ramadan + MOH health freezes as specified events
  • Reciprocal SLA audit rights — Licensee audits platform uptime; Licensor audits royalty reporting
  • Grace period: extend from 6 → 9 months at zero royalty
  • Non-compete: counter 24-month clause to ≤12 months post-termination

SRA v3 — Additional Clauses (not summarised above)

  • §5.5 — 51% ownership renegotiation trigger; 90-day notice required from either party
  • §5.2 — pari-passu exit: both parties exit at equal per-share value on any liquidity event
  • §5.3 — anti-dilution: both parties' equity preserved pro-rata on any new share issuance
  • §13.9 — FMV buy-back: either party may buy out the other at independently-assessed fair market value
  • §10.6 — no software-cost reimbursement to ECJ-US even on termination
  • §9.1 — annual audit right; cost shifts to audited party if variance >5%
  • §13.10–13.11 — 60-day wind-down transition licence; platform access maintained; ECJ-UAE data returned within 30 days

C · Kendrick King — Full Clause Detail

(Supplements the card summary above — Exhibit A detail and named clauses)
  • IP assignment: all work product, inventions, and improvements assigned irrevocably to ECJ Inc.; assignment survives termination
  • Non-solicit + non-compete: 1 year post-engagement in the personal-chef-platform sector within Austin TX
  • Termination: 3-day cure period for uncured breach; Company may terminate without cause on 10 days' notice
  • DTSA notice: contractor notified of Defend Trade Secrets Act immunity for disclosures to attorneys or government
  • Governing law: California law; venue — Santa Clara County Superior Court
  • Exhibit A scope (Austin TX): weekly meal planning, grocery pickup, meal prep & packaging, kitchen cleaning + sanitation, ingredient sourcing per dietary requirements, health & safety compliance
  • Rate: $30/hour part-time, paid weekly via Zelle
  • Status: independent contractor — no benefits, no withholding, no agency relationship

AI-run marketing

Two SOPs that run the marketing engine.

The marketing plan is delivered by two repeatable AI standard operating procedures — a content-strategy engine and a full 5-agent team — both buildable in well under an hour.

The Instagram-analysis SOP

An 8-step SOP that scrapes and analyses any Instagram profile and generates a 30-day content strategy in ~5 minutes.

  • Stack: Claude Desktop + Apify MCP + actors-mcp-server + a brand-voice doc.
  • Cost: ~$0 recurring — one Claude Pro seat ($20/mo); Apify's free tier covers ~10–20 audits/month.
  • Pulls ~18 posts per 90-day window; ~75% of the workflow is automated.
  • Ships with a reusable master prompt — engagement / reach / saves / shares across Reels, carousels, static and Stories → a 30-day calendar with themes, formats, frequency, hooks and growth tactics.

The AI Marketing Team SOP

A 5-phase SOP that stands up a 5-agent / 36-skill "AI Marketing Team" in Claude Code in ~30 minutes.

  • 5 agents: Data Analyst · Content Creator · Market Researcher · Creative Designer · Campaign Strategist.
  • 36-skill library: open-source coreyhaines31/marketingskills set (copywriting, CRO, SEO, growth, pricing, email/ads, analytics).
  • Control surface: Notion task board driven remotely via the Nano Banana MCP; SMS → n8n/Zapier → Notion automation.
  • Operating principle: "95% of bad AI output is a context problem" — the SOP front-loads context before agents run.

09 · Chef Operations

How chefs are hired and held to standard

A 7-stage hiring pipeline, a UAE-localized 6-stage SOP variant, and the operating policies that govern quality, payment, cancellation and ratings.

Hiring pipeline (7 stages)

  1. Indeed Application + assessments
  2. Resume + online review (web, social, LinkedIn)
  3. Typeform pre-interview screen
  4. Video screen (30 min)
  5. Cooking stage — 2 dishes, home kitchen
  6. Contract offer (Zoho, W9, contract)
  7. Onboarding — personalized checklist

UAE SOP variant compresses this to 6 stages with a 72-hour max application-to-live time. Screening is designed to filter ~70% of unqualified applicants before any call.

Documents chefs must provide

  • Valid UAE Food Handler / Food Safety Certificate (hard reject if missing — PIC Level 2, ~AED 600)
  • 2+ years professional restaurant/catering experience
  • Minimum 2 cuisines declared with confidence level
  • 5–10 portfolio photos of professionally cooked dishes
  • Passport / Emirates ID copy · health/typhoid clearance
  • 2 verifiable references (≥1 from in-home cooking)
  • Background-check consent, completed Typeform, W9, signed Zoho contract

Qualification weighting: Cooking Stage 35% · Video Screen & Communication 25% · Resume + Background 20% · Typeform 15% · Online Presence 5%.

SOP & policies

Operating standards

Respectful communication; arrive early and prepared; kitchen-appropriate dress & grooming; current food-safety certification; proper labelled storage with reheating instructions; leave the kitchen clean, dry and tidy; respect the client home.

Payment & penalties

Parking reimbursed up to $10/session. Late-arrival penalty $25 if >10 min past start. Emergency ingredient delivery deducted from chef's fee. Completed-food photos must be posted to Slack #foodpics — failure may result in non-payment.

Cancellation

Minimum 48 hours notice. Same-day cancellation without valid emergency = warning + possible removal. 2+ last-minute cancellations = pause / reassessment. Cancel via text and email with date, client name, reason.

Ratings & escalation ladder

Clients rate three areas — Timeliness (Yes/No), Kitchen Cleanliness (Yes/No), Meal Experience (1–5 stars). Thresholds: below a cumulative 4.5 Meal Experience rating = restricted from new bookings (pending review); below 4.0 = permanent removal. UAE SOP requires a minimum 80/100 weighted scorecard to be listed, a ★4.5 ongoing threshold, and a 3-strike complaint policy. Escalation: fee reduction → reduced bookings → restriction pending profile review → permanent removal.

  • Wet salad and fish stored separately; wrap + label protocol
Hiring & policy — the working instruments

The actual instruments behind the process.

The pipeline and the 80/100 scorecard are the frame. These are the instruments that run inside it — the interview workbook, the full policy clauses, and the live US tooling links.

The chef-interview scorecard workbook

Interviews are run from a multi-tab workbook, not an ad-hoc call. A "Template" tab sets the structure — Candidate Name, Resume, Introduction script (intro the ECJ panel; share the ECJ opportunity), then a repeating Interviewer / Question / Summary-of-Answer grid — and each candidate gets a dated tab. The question set covers: response to the ECJ vision/mission, formal culinary training, culinary experience, why personal-chef work, how it differs from restaurant work, recipe creation process, a mistake-and-recovery story, conflict resolution, and logistics (own transport to sessions).

Privacy: this is a description of the system only — do not publish individual candidate names, contact details or interview notes on the live page.

Master Chef Policies — full clause text

  • Food safety: meat cooked to USDA temperature standards; current food-safety certification required.
  • Cleaning scope: chefs are not expected to clean the microwave, floors, cabinets, refrigerator or unused dishes — only their own working area.
  • Staples rule: must be communicated to client at least 24 hours before the session.
  • Wrap-up: cool food before storing; store wet salad components separately; space fish filets; secure trash; check taps / stove / oven off; return unused groceries.
  • Penalties: emergency-ingredient delivery deducted from session fee; completed-food photos posted to #foodpics or payment may be withheld.
  • Escalation: 2-strikes-then-restricted — repeated lateness or quality misses → fee reduction → reduced bookings → restriction → removal.

US hiring procedure — live tooling

The 7-stage US procedure runs on linked live tools:

  • Typeformeatcookjoy.typeform.com/chefinterview, 6 interview questions + Food Handler cert / background-check consent / availability.
  • Video screen — a 10-question bank with 6 scored evaluation criteria.
  • Cooking stage — chef submits 3 recipe options; ECJ picks 1 and assigns 1 from the ECJ recipe library; ECJ supplies ingredients and equipment.
  • Welcome — "Becca · ECJ Ops" onboarding email template closes the loop.

Qualification weighting: Cooking Stage 35% · Video Screen & Communication 25% · Resume + Background 20% · Typeform 15% · Online Presence 5%.

10 · AI Ops Playbook

One founder, run solo for 90 days

The EatCookJoy UAE AI-Powered Operations Playbook lets one non-technical founder run the business solo for the first 90 days — at roughly AED 2,200–2,800/month in tooling.

AI tool stack

Claude / ChatGPT / Perplexity (strategy & content) · Framer (website) · Stripe Connect (payments) · WATI (WhatsApp Business API) · Make.com (automation glue) · Canva Magic Studio + Figma · Midjourney / Firefly (images) · HeyGen / Opus Clip / CapCut (video) · ElevenLabs (voice) · Metricool (social scheduling) · Notion AI (SOPs/knowledge base) · Wafeq (UAE bookkeeping, VAT 5%) · Looker Studio (dashboards).

12 core workflows

Chef recruitment · client lead capture · booking & payment · menu personalization · grocery list & cost calculation · chef briefing & dispatch · daily content creation · social media scheduling · WhatsApp concierge support · reviews & UGC collection · reporting & dashboards · influencer & PR outreach.

Backed by a 28-prompt master library and 10 Make.com automation recipes (R1–R10). Targets: 60-second WhatsApp quote · food cost ≤28% · 18% lead-to-booked.

Never delegate to AI: hiring final calls · chef quality control · refund decisions · regulatory/legal · financial decisions.

5-Scenario Emergency Playbook

Chef cancels T-3h

"Hi [Client], I'm so sorry — your chef [Name] has had an emergency and can't make today's session. I'm personally calling our backup list right now. You'll hear from me in 15 minutes with either a confirmed replacement or a full refund + AED 50 credit. I'm sorry for the stress."

Food-illness incident

"I'm so sorry to hear this. Your health comes first. Please rest and see a doctor if needed — we cover any medical costs linked to this session. I'm pulling all records from [Chef]'s preparation and will call you within 2 hours." Suspend chef pending review.

Stripe chargeback

Pull the booking record, chef dispatch log, and client message thread. Submit to Stripe within 7 days. If won: note the client. If lost: write off; block client if fraud signal.

Viral negative review

"[Name], thank you for telling us — this isn't the standard we hold ourselves to. I want to make this right. Can we jump on a 10-minute call today?" Do not argue publicly. Resolve privately then ask to update review.

11 · Tech Stack & App

The architecture behind the platform

The ECJ-UAE app — "EatCookJoy — Chef Onboarding Platform" — is a two-sided gig marketplace modelled on Ogram's architecture. The proven blueprint comes from the original EatCookJoy SF rebuild that reached $1M ARR — read the full case study by Hypernest Labs ↗.

Mobile — chef-facing app

React Native (Expo SDK 51) + TypeScript · Zustand state management · React Navigation v6.

MVP features: chef registration, 7-step onboarding wizard, document vault, profile builder, skill verification, shift discovery, schedule, earnings dashboard, bidirectional ratings, in-app chat.

Backend

Node.js 20 + Express + TypeScript · PostgreSQL 15 + Prisma ORM · Auth JWT + OTP (Twilio Verify) · Storage AWS S3 · Push Firebase Cloud Messaging · Payments Stripe Connect (planned — referenced in code, not yet implemented) · KYC Onfido (planned — referenced in code, not yet implemented) · Hosting AWS me-central-1 (Dubai).

Admin dashboard

Next.js 14 (App Router) + Tailwind + shadcn/ui — to be built.

Prisma data models

8 core models: Chef, Cuisine, ChefCuisine, Document, Shift, Booking, Review, Payout. Enums: ChefStatus, SkillLevel, DocumentType, DocumentStatus, ShiftStatus, BookingStatus, PayoutStatus.

Build conventions

Money stored as integer fils (100 fils = 1 AED), never floats. Time stored UTC, rendered Asia/Dubai on client. TypeScript strict: true, no any. Validation via zod; structured logging via pino; API responses { data } / { error }. MVP scaffolding complete. Built & functional: all 5 backend route files (OTP/JWT auth, chefs, S3 presigned upload via documents.ts, 8-step onboarding tracker, shift discovery + accept-with-transaction via shifts.ts); 4 of 5 mobile screens (SignIn, OnboardingWizard, Dashboard, Shifts). Stubbed / missing: ProfileScreen (placeholder only), admin/ Next.js dashboard (does not exist), zero tests, Onfido KYC + Stripe Connect (referenced in code, not implemented), per-step onboarding persistence. Off-brand alert: app theme.ts still uses old red/black palette (#E10600) — needs re-skin to locked brand tokens.

SEO status

Findings

SEO Health Score 62/100 vs UAE F&B median 80. A second framework audit found the site returned zero indexed pages in Google (SEO 2/10, GEO 2/10, AEO 2/10). High-severity: missing Restaurant/Menu/FAQPage schema, thin homepage copy (~180 words), no hreflang for Arabic (~38% of UAE search), generic title tags, no internal-link hubs.

8 critical quick wins

  • Confirm site publicly accessible (200 status)
  • Fix robots.txt — allow indexing + AI crawlers (GPTBot, ClaudeBot, PerplexityBot)
  • Publish /sitemap.xml
  • Register Google Search Console + Bing Webmaster Tools, target UAE
  • Ship Organization + LocalBusiness JSON-LD (+971 phone, AED currency)
  • Deploy hreflang linking www.eatcookjoy-uae.com (en-AE) ↔ eatcookjoy.com (en-US)
  • Create/verify a UAE Google Business Profile
  • Publish a UAE FAQ page with FAQPage schema

Known Issues — BUG-01 · Chef Not Appearing in Admin List

5 Ranked Root Causes

  1. Status filter: list query hard-codes status='active' — newly onboarded chefs are often pending; fix by including pending in admin query or adding status-toggle controls
  2. Country mismatch: form submits "United Arab Emirates" but query filters on "AE" — normalise to ISO 3166 at input
  3. Org/tenant scoping: multi-tenant setup scopes chef query to a default org; UAE chefs not assigned to it won't appear
  4. Expired JWT: Supabase/Auth token expiry not enforced on admin routes — stale tokens return silent empty result sets
  5. Stale CDN/Redis cache: chef-list response cached aggressively; new records not invalidating cache on insert

UAE Payment Architecture — 6 Closed Decisions

  1. 3-hour minimum booking — adopt the US model; no hourly bookings under 3 hours
  2. Stripe selected — international entity now; switch to UAE entity post-licence. Airbnb-style card hold at booking, charge on chef check-in confirmation
  3. Cash excluded at launch — all payments through Stripe; no cash-on-delivery
  4. Single card hold, no double-charge — one authorisation per booking, captured on completion
  5. Configurable cancellation per chef — Strict / Moderate / Flexible tiers. Reconcile This supersedes §09's flat 48-hour rule — confirm which governs at launch
  6. Phased Stripe Connect rollout — manual invoicing Mo. 1–3 → partial Stripe Connect Mo. 4–6 → full payout automation Mo. 7+. Benchmark: Dinner Elf payment flow

Mindtree UAE — 8-Branch Feature Roadmap

  • Receipt OCR — grocery PDF → ingredient tracker, auto-populate
  • Grocery integration — Instacart (US) → Noon & Talabat Food (UAE)
  • AI dish-search menu builder — natural language → personalised suggestions
  • Auto allergen removal — flag + rewrite for 14 EU/UAE declared allergens
  • SMS-survey → auto star rating — post-session SMS → 1-click → Trustpilot/Google push
  • B2B catering — group ordering for offices, events, corporate contracts
  • Branded-chef-at-home — chef retains personal brand; platform handles payment + scheduling
  • 2-week sprint — Receipt OCR targeted for first 14-day delivery cycle

Ties to the "Chef-Owned Organizations" pivot (§07 AMEND-28): chefs retain menu and recipe ownership; platform provides logistics and payment infrastructure.

SEO — residual priorities: (1) hreflang dedup risk — without hreflang tags Google may fold www.eatcookjoy-uae.com into the older Austin domain, destroying UAE-specific ranking signals; (2) Framer JS-rendering — validate via URL Inspection + Fetch as Google before launch; (3) City-page architecture — build /private-chef-dubai, /private-chef-abu-dhabi, /private-chef-sharjah with LocalBusiness schema; (4) Austin traction proof — 1,086 hours saved, ~5,000 servings, $8–$14/serving — use as platform-wide traction evidence in copy.
Ogram tech-stack diligence (reverse-engineered, 78% confidence): inferred 8–12 microservices, ~12M+ API requests/day. Tech-OPEX: 42% engineering salaries / 28% cloud (AWS me-central-1) / 12% SaaS tooling / 18% other. Stack: Node.js + PostgreSQL + Redis + React Native + Stripe. ECJ's Ogram-modelled architecture is directionally sound; validate against Ogram job postings as diligence evolves.
eatcookjoy.com — US site SEO state (separate from UAE): 5-city marketplace (NYC, SF, LA, Austin, Chicago) with empty robots.txt and no city-specific SEO pages. Covered by a separate 12-month dual-site SEO plan. US site traction: 1,086 hours saved, ~5,000 servings, $8–$14/serving — stronger evidence base than the UAE site currently holds.

17 · Chef Roster

The founding chef squad

The 25-chef supply target lives here — a searchable address book with photos, contact, nationality, cuisines, experience and worked areas. Every entry must clear the §09 hiring pipeline and §05 compliance gates before going live.

Roster discipline

  • OHC + Food Handler verified before activation — no exceptions
  • 2 cuisines minimum, confidence-rated
  • 5–10 portfolio photos per chef
  • Service agreement on file (not employment)
  • Auto-suspend on expiry — Make.com R6 watcher

What the roster lets us do

  • Filter by cuisine × area × availability in seconds
  • Dispatch via WhatsApp from the row
  • CSV export for ops, payroll, insurance audits
  • Backstop the AI menu (§10) with verified human supply
  • Anchor SEO "Private Chef in [area]" pages

HeyChef.ae
Dubai · 4 brand entities · acquired ~2023–24

Growth: 2→7 chefs, 600+ customers, 5,000+ bookings at AED 75/hr (2022 pricing). Won Best UI + Best UX at Unlock Awards 2021. Completed a 6-month Aarts rebrand that gave it full ownership of the yellow brand palette. Built on $0 VC → exit ~2023–24, estimated USD 0.5–1.5M. VERDICT: RIP

ChefXChange — the cautionary tale

ChefXChange
Dubai · 2014–2022 · defunct global marketplace

Founded 2014, Dubai-based global private-chef marketplace. At peak ran approximately 60% of global private-chef bookings on a 15% chef-side commission model. Now defunct (~2022).

ECJ Lesson: Demand was real — the unit economics and compliance posture were not. Asset-light marketplaces must collect and spend less than they make, every month.

VERDICT: STUDY & BORROW

InstaChef UAE — the employment-first chef-to-home marketplace

InstaChef
Dubai · founded 2019 as Being Cook · relaunched 2022

Founded by Mohammed Arif (ex-MD, German multinational, Chartered Accountant). Employment-first model: chefs are legally employed by InstaChef — UAE visa, government medical, in-house training in cuisine, hygiene and etiquette. 8+ cuisines covered. Trial session AED 100, monthly subscription quoted on enquiry. Won Most Trusted Startup of the Year — Food & Service at Dubai Business & Startup Awards 2025; featured on Falcons of Majlis 2026. Google rating 4.9, claimed 97% satisfaction.

ECJ Lesson: Compliance is the moat against the informal grey market — but it inflates unit economics. Use B2B chef supply (restaurants, holiday homes, corporates) as a higher-margin relief valve while the B2C subscription funnel converts. The operating sheets — column detail

  • Master Sessions — Session Date, Client, Chef, Week, Menu Confirmed (Wed), Staples Placed (Fri), Servings, Dishes; grocery-order status workflow (Not Started → In Progress → Placed → Confirmed → Shared); per-session financial tracker (Total Invoice, Service Fee, Sales Tax, Cost/Serving, Chef Rate, Net); "Chef Payment Tracker" + "Q4 Tax" tabs.
  • Menu Selections — Order ID, Client, Order Content (dish-level), Order Split.
  • Ingredients List — per-dish spec: web link, category, allergens, serving size, prep/cook time, ingredients 1–13 with quantities.

The live admin platform

The app.eatcookjoy.com admin UI already runs UAE bookings — a "Your Bookings" view with Dubai sessions (May 2026) and a per-booking Actions menu: Manage Menu, Manage Receipts, Create Invoice, Reschedule, Reassign Chef, Generate Grocery List.

What this file is

A consolidation of the entire EatCookJoy UAE project — 23 sections (§00–§22, plus this §23 Handover) drawn from ~40 source files across three folders (the project folder, Desktop ECJUAE, and Dropbox Ecj). It is the single source of truth for handover; it does not replace the underlying source documents.

Soft warm-light food photography, elegant editorial typography, and an organic palette drawn from rust, burgundy, and sand. Feels more like a beautiful cookbook than an app — focused on the interaction: the dinner table, the moment of connection. References: Plateful, Glory, Selfridges food editorial, Bouquet Radler.
